Located in one of Sydney’s most renowned dining precincts, Mercado restaurant offers a share-style menu inspired by the Mediterranean, with Spanish cuisine being a particular focus. Mercado’s passionate and skilled kitchen team is headed by Executive Chef: Emilio Erazo. Emilio brings a wealth of knowledge and first-hand experience through his time working in many celebrated kitchens throughout Spain and South America and Australia from Santiago de Chile to Quito, Barcelona to Easter Island, Porto Alegre, Brazil to Sydney. He marries his passion for the authentic interpretation of regional Spanish cuisine with his desire to celebrate the high-quality, fresh produce supplied by a close network of small farmers. Just like a true ‘Mercado’ or marketplace the menu offered evolves alongside the seasons and the unique produce we select from these farmers. It is enriched by the revival of traditional kitchen craft: Whole animal butchery, inhouse meat curing, dry-aging of premium cuts of beef all showcasing our passion for produce and delivering a memorable dining experience to our guests.
